D&W Fermentation Crock 5 L

It is a sensational bit of kit for anyone who is thinking about fermenting. I have had mixed success with fermenting in the past; keeping that seal for the duration sometimes fails. Not so with this fermentation Crock. My last batch of Sauerkraut stayed under ferment for 3.5 weeks. I only had to top the sealing water level up once but even then, there was plenty of safety margin in the seal. This was the best batch I have made. I've been reluctant to go so long without even looking inside but now feel confident to leave it for a month or more, keeping an eye on the water level and otherwise, not having any worry about the seal or the result. Highly recommended and a much better alternative to airlocks, vents and other gadgets for letting the CO2 escape. Unfortunately, best practice is never to lift the lid until the ferment is complete, no matter what period that may be for your own taste. With the ceramic crock, you can't see what's going on inside so you have to be super disciplined, to be patient and trust that if you started properly, with clean utensils and hands, the result will be fantastic!
